A quick weeknight one pan meal with leftovers!

Jim’s Quick Meatloaf

Meatloaf has been one of my favorites since childhood. My job was to mix all of the ingredients by hand in the kitchen with my Mom. You can use whatever odd veggies you have available. It's a great dish to use up random bits hanging out in the fridge!

  1. Preheat oven to 400° F (use convection roast or air fry mode, if equipped). Heat a skillet over medium-high heat. Add oil to skilled and sauté onions, carrots, and mushrooms for 5-7 minutes until onions turn translucent. Add garlic and cook for one minute. Add spinach or mixed greens and cook for 3-4 minutes until wilted. Remove from heat and place in a bowl to cool for 10 minutes.

    In a large mixing bowl, combine ground pork & beef, breadcrumbs, eggs, oregano, ketchup, salt, pepper, granulated garlic & onion, and paprika. Add veggies and mix by hand or spoon until all ingredients are fully combined.

    In a roasting pan or cast iron skillet (my favorite), place the meat mixture and shape into a loaf about 2-inches thick. Coat with ketchup.

    Place a meat thermometer into the center of the loaf. Roast for 20-30 minutes until the internal temperature reads 145° F. Remove from oven and cover with foil. Let rest for 10 minutes before slicing.

    Slice and serve with your favorite sides! Enjoy!
