Cast Iron Skillet Filet Mignon with Mushrooms, Brown Rice, and Greens

Instructions

For the Rice

  1. Place the Olive Oil in a 3qt saucepan and heat on medium-high.

  2. Add Brown Rice and toast while stirring occasionally for 3-5 minutes.

  3. Put Beef Broth in the pan being careful of splatters.

  4. Cover, bring to a boil, then turn down to simmer for about 40-45 minutes.

  5. Check for doneness and add water if it needs a little more time.

For the Filet Mignon and Mushrooms

  1. Preheat an Oven to 425 degrees. If your oven has a Convection Roast mode, use that.

  2. Remove Steak from the refrigerator 30 minutes before cooking to come up to room temperature. Prepare Mushrooms and Garlic and set aside.

  3. Rub Steaks with seasoning on all sides.

  4. Place a large Cast Iron Skillet on the stovetop on high heat. After a few minutes add the oil and butter.

  5. Once the pan starts to slightly smoke, place Steaks inside pan. Sear for three minutes per side. When searing is complete, add Mushrooms, Garlic, Thyme, and Rosemary.

  6. Put cast iron skillet in the oven with a meat thermometer inserted into the center of the steak. Roast until internal temperature is 120 degrees for Med-Rare or your desired doneness. Give Mushrooms a stir when the meat hits 100 degrees or so.

  7. Once cooking is complete, remove from the oven and cover steaks on a separate plate to rest for 5-10 minutes. Leave skillet on stovetop with mushrooms in it. You can reheat them just prior to serving.

For the Sautéed Greens

  1. While the steak is in the oven, place a large skillet on the stove on medium-high heat.

  2. Add the Broth, Garlic Powder, Onion Powder, Salt, and Pepper and cook down until the bottom of the skillet is barely covered in liquid.

  3. Place Greens in the pan, cover, and reduce the heat to medium-low. Stir a few times. It should take no more than 45 minutes to cook down.

  4. Turn off heat and crack the cover to avoid overcooking.

Serve it UP!

  1. Add juice from rested Steaks into the Mushroom topping and quickly reheat.

  2. Place the Rice and Greens on a plate. Place Steaks on plate and cover with Mushrooms and all of the juices.

  3. Add a pat of Butter on top of the Steak. MANGIA!
