Instructions

  1. Combine bacon and onion, saute over medium heat until the bacon is rendered and onions are soft. Add garlic and saute for 1-2 minutes. Place remaining ingredients in the pot and cook for 6-8 minutes until all sugar is dissolved and all ingredients are well incorporated. I use the starchy water from the can to thicken the beans. Place in an oven proof or disposable foil pan in the Smoker at 225-250°F for 2-3 hours. Stir occasionally to help smoke that has accumulated on the surface to mix into the beans. Be sure to check the moisture level of the beans and add water as necessary so they don't dry out.

Note

Throw the beans in the smoker on a rack underneath any meat you're smoking to pick up some drippings. I like to use a wide shallow pan to allow a large surface area for the beans to collect smoke. Turn your regular BBQ into a smoker by using a smoke tube! Search for "Smoke Tube" Online!
