Quick and Easy Fruit Tart

This is a ONE BOWL whip it together in a few minutes kind of dessert! Perfect for last minute baker who needs to show up to a dinner party or gets a call that friends will be over in a few hours. We prefer to use fresh fruit, but frozen will do as well. Frozen fruit tends to contain more moisture and might lengthen the cooking time a bit. Choose any fruit you would like to have baked into a moderately sweet pastry!

Preparation

  1. Preheat Oven to 350°F. In a large mixing bowl, cream the butter and sugar in a bowl using a hand mixer or whisk.

  2. Add flour, baking powder, salt, and eggs and mix well. The batter will be thick, not runny like cake batter.

  3. Spoon the batter into a springform pan and spread out with the back of the spoon.

  4. Place fruit on top of the batter. If using fruit like plums, peaches, etc. place them cut side up. Sprinkle the top of the fruit covered batter with sugar and cinnamon.

  5. Bake 50 minutes and check doneness with a toothpick. The toothpick will come out clean if done. If it's not quite done, bake at additional 5 minute intervals and check again.

  6. Let cool on a rack for 10 minutes. Run a small knife around the inside rim of the pan sides and release.

  7. Cut up into 8 slices, serve with whipped cream, additional fruit, or whatever sound tasty. Enjoy!
