Cast Iron Skillet Filet Mignon with Mushrooms, Brown Rice, and Greens
Ingredients
Brown Rice
Filet Mignon and Mushrooms
Sautéed Greens
Instructions
For the Rice
-
Place the Olive Oil in a 3qt saucepan and heat on medium-high.
-
Add Brown Rice and toast while stirring occasionally for 3-5 minutes.
-
Put Beef Broth in the pan being careful of splatters.
-
Cover, bring to a boil, then turn down to simmer for about 40-45 minutes.
-
Check for doneness and add water if it needs a little more time.
For the Filet Mignon and Mushrooms
-
Preheat an Oven to 425 degrees. If your oven has a Convection Roast mode, use that.
-
Remove Steak from the refrigerator 30 minutes before cooking to come up to room temperature. Prepare Mushrooms and Garlic and set aside.
-
Rub Steaks with seasoning on all sides.
-
Place a large Cast Iron Skillet on the stovetop on high heat. After a few minutes add the oil and butter.
-
Once the pan starts to slightly smoke, place Steaks inside pan. Sear for three minutes per side. When searing is complete, add Mushrooms, Garlic, Thyme, and Rosemary.
-
Put cast iron skillet in the oven with a meat thermometer inserted into the center of the steak. Roast until internal temperature is 120 degrees for Med-Rare or your desired doneness. Give Mushrooms a stir when the meat hits 100 degrees or so.
-
Once cooking is complete, remove from the oven and cover steaks on a separate plate to rest for 5-10 minutes. Leave skillet on stovetop with mushrooms in it. You can reheat them just prior to serving.
For the Sautéed Greens
-
While the steak is in the oven, place a large skillet on the stove on medium-high heat.
-
Add the Broth, Garlic Powder, Onion Powder, Salt, and Pepper and cook down until the bottom of the skillet is barely covered in liquid.
-
Place Greens in the pan, cover, and reduce the heat to medium-low. Stir a few times. It should take no more than 45 minutes to cook down.
-
Turn off heat and crack the cover to avoid overcooking.
Serve it UP!
-
Add juice from rested Steaks into the Mushroom topping and quickly reheat.
-
Place the Rice and Greens on a plate. Place Steaks on plate and cover with Mushrooms and all of the juices.
-
Add a pat of Butter on top of the Steak. MANGIA!
