Toss with 2 Tbsp oil, smoked paprika, salt, and pepper. Place in the oven and roast until tender and caramelized, about 25-30mins.
Meanwhile, heat a large skillet over medium-high heat, add chorizo and brown. Turn down heat to simmer, add butter and lime juice. Season with salt and pepper to taste.
Remove sweet potatoes from oven when finished and transfer to a serving dish. Pour over warm chorizo-butter mixture and garnish with lime wedges and cilantro.
This can be kept in a warm oven, but potatoes might soften. Wait until the last minute to garnish with lime wedges and cilantro.
