Polenta is a very versatile main or side dish. It is very hearty and can be flavored with a variety of ingredients like mushrooms, garlic, leeks, sausage, etc. It can be made gluten free, vegan, vegetarian, or meat-based. This should definitely be a quick go-to dish for every home cook!
Heat a large pot over high heat with water and salt, bring to a boil. Whisk in polenta and reduce heat to simmer. Cook slowly for 25-30 minutes, stirring frequently. Taste for polenta to be tender. Add small amounts of water if necessary. Turn off heat and let sit for 10 minutes. Stir well prior to serving. Use additional hot water to loosen so it can be easily served. Garnish with Coulis and Parsley.
Combine all ingredients in a blender or food processor and blend until completely smooth. Let sit for flavors to develop. Keep warm prior to serving.
Use plain water instead of stock and milk.
Add Parmesan, Pecorino Romano, Cheddar, or any favorite cheese for flavor.
Serve with sliced Italian Sausage, Chicken Breast, sauteed Mushrooms, or Root Vegetables.
