When we make brown rice, there is always leftovers. A great way to use the rice is to make burgers with beans. It's packed with fiber and protein and low in fat. Double Bean and Brown Rice Burgers are a quick weeknight meal that is filling and nutritious! Top it with a lower fat cheese like provolone and serve it with or without a bun with sauteed greens or a side salad.
In a large bowl, mash the beans and rice with a potato masher.
Add the garlic, cilantro or parsley, smoked paprika, granulated garlic and onion, cumin, salt and pepper and stir until combined.
In a separate bowl combine the egg and bread crumbs. Add egg and panko mixture to the bean mixture and stir until fully incorporated. Let rest for 15 minutes for the flavors to meld and mixture to become firm.
Heat a cast iron or non-stick skillet on medium heat. Add olive oil to the pan.
Grab about 1/4 of the mixture with your hand and form into a patty. Place the patty in the pan. Continue with the remaining three patties.
Cook on medium heat for 6-8 minutes per side until golden brown and crisp, flipping once. If topping with cheese, place cheese on patty just after flipping and use a lid to retain heat to melt the cheese. Check it after a few minutes so the cheese doesn't melt off the patty.
Serve with a Bun (Brioche is our favorite) or naked on top of a bed of Sautéed Greens, with a Salad, or oven roasted Sweet Potato Fries.
